Anise began with two childhood friends who have a passion for fresh, exciting and healthful food. For years the pair would get together after work and cook what was not readily available at Laredo restaurants: creative, nourishing and often plant-based meals. With a singular vision in mind, the women created the kind of restaurant they had been missing in their hometown.
Their idea for a vegan place slowly morphed into an enterprise that has something for everyone: the carnivores, the gluten-free, pescatarians, vegetarians and vegans. Then they thought to add a market, where they sell kombucha, cold-pressed juice, grain-free cereal, bone broth and a myriad of delectable accoutrement Laredoans won’t be able to find at the grocery store. But still the thoughtfulness behind their original vision abides, and health remains at the forefront of Anise’s menu.

A home cook with a passion for veggies and all things plant based, Rebeca worked for a real estate company for over 10 years until the opportunity to open Anise was offered to her by one of her best friends Evelyn. With no restaurant experience, they both spent 2 years researching, designing the space and working on recipes. The end result was a combination of both their style and love for fresh food and ambience. Anise has become Rebeca’s second home and along with Buck Barnett (chef) and Misty Held (manager), they have created a happy and inviting place for Laredoans to enjoy unique dishes, cocktails and great times.

A Washington D.C. native by way of Dallas, Misty has worked in the restaurant industry for over 15 years. Having worked in some of the most pristine restaurants in North Texas and Washington D.C., she has a knack for perfection, organization, and great customer service. Since her start at Anise, she has helped mold and guide our employees to be the most they can be, and the management team has greatly benefited from her experience.

Chef Buck grew up in Laredo, he joined the military at an early age, and proudly served in Desert Storm. Upon returning home, he worked for his family business then found himself headed to Colorado to work in Denver and Aspen at the luxury five star hotel, The Little Nell, where he was trained in classic french cooking techniques. He made his way back to his hometown at the exact same time Evelyn and Rebeca were getting ready to open Anise, and joined the team. He is Head Chef at Anise Kitchen, and an indispensable asset to the team.
